Marion Nestle teaches food studies and public health at New York
University. The professor has written several books about the
politics behind our food supply and how agribusiness influences our
food choices and health.
Not surprisingly, Nestle supports New York City's recent proposal
to ban the use of trans fats in restaurants and require the posting
of calorie contents on menu boards. "Trans fats," Nestle explained in
a recent New York Times editorial, " ... raise the risk of heart
disease, can easily be replaced and should have been out of the food
supply a long time ago."
