Article: Dairy Farmers of Ontario: Artisan Cheese Program Encourages Traditions of Cheese Maker's Art

MISSISSAUGA, ONTARIO--(CCNMatthews - April 21, 2006) - Dairy Farmers of Ontario (DFO) is pleased to announce the launch of the Artisan Cheese Program this month to encourage new small-scale cheese makers using traditional production methods.

"Consumers will benefit from even more varieties of high-quality cheeses in the market," said DFO Chair Bruce Saunders. "New small- scale cheese makers will benefit by easier access to milk to supply their needs."

Artisan cheese, under this new Ontario program, is cheese produced primarily by hand, in small batches, with particular attention paid to the tradition of the cheese maker's art. This program will mean the addition of three million litres to ...
