The next time a fast-food restaurant employee asks through a crackling speaker, "Would you like fries with that?" Gary Sims hopes you answer, "No thanks."

Sims recently opened a chain of health food stores, Healthy Life Markets. Business has been booming, he says.

He hopes that those who browse through the store's assortment of soy-based, organic, vegan and low-carb offerings will be enticed to make a lifestyle change in their diets.

"There's this American lifestyle that we feel like we need extra food," Sims said. "Why do we need a biggie size?"
