HOW do you make homemade mozzarella sticks like you find in restaurants? The mozzarella restaurants use for these sticks is not the same cheese they would choose for a wonderful fresh tomato, mozzarella and basil salad. When we are breading and frying cheeses, the harder the cheese, the better. Look for the block of mozzarella instead of the soft balls of fresh mozzarella. In fact, you could substitute another hard cheese, like cheddar or real Parmesan.
