Q: I hope this isn't a stupid question. I have some cookbooks that
call for powdered sugar and others that call for confectioners'
sugar. Aren't they the same? If not, how are they different?
A: I call the ingredient in question powdered sugar and my pastry
chef calls it confectioners' sugar, and it's probably because we grew
up in different places and that's how we each first heard it.
There are so many terms for the same thing in the food world
because language shifts from area to area. Some people say bell
peppers, and some say sweet peppers. Some folks say cola while others
say pop or soft drink.
