As an herb, parsley doesn't get much respect. But just try to name
another that's planted as often, sprinkled more liberally or appears
in more recipes than this fragrant versatile plant.
Parsley was as valuable to the Greeks and Romans as it is today,
with enough culinary, decorative and medicinal uses to command a
patch of soil in every kitchen garden. Ounce for ounce, parsley
contains more vitamin C than oranges and enough nutrients to compete
with multivitamin tablets.
Perennial gardeners find the luxuriant leaves of giant flat-
leaved parsley useful for texture and harmony among the flowers in
