Year in and year out, few businesses are flatter or duller than
selling salt. Normally, sales grind along, and the little Morton Salt
girl with the umbrella makes off with the money.
But suddenly there's one hot little corner of the industry where
Morton Salt is under assault: kosher salt. That's the term used for
all kinds of coarse-grained salt, quite unlike the sandy crystals in
saltshakers. The salt got its name because it is used in preparing
kosher meat. To people who don't observe Jewish food laws, it's just
salt good for dipping the rim of a margarita glass in.
In recent times, more and more chefs are proclaiming that it's
