Article: Olive oil seeps its way into mainstream cooking

There's one substance in this world that has thrived through more than 6,000 years of wars, leaders and religious upheavals.

It's olive oil.

Olive oil was brought to America from the Mediterranean more than 100 years ago. Ancient civilizations used the liquid gold oil to relieve physical ailments. In ancient Islam, people applied olive oil to their bodies as a holy sacrament. And the Christian church often uses olive oil as a baptismal anointment.

But, today, olive oil is an integral part of many recipes - from zesty marinades and sauces for meats to seafood, appetizers and desserts.
