IN the Perigord countryside of southwest France, geese grow fat
under the walnut trees and people relish salads with foie gras,
walnuts and walnut oil.
Despite their rich diet, they have the second-lowest rate of heart
attacks in the world - the people, not the geese. At first,
scientists credited wine's heart-healthy properties, but then they
realized that the people of Perigord don't drink any more wine than
other Europeans.
The secret, they realized, is the walnut oil.
Rich in vitamin E and polyunsaturated fat, walnut oil has been
