INSTRUCTOR Karen MacNeil faced the three dozen students and
started with a statement more likely to relax everyone than a glass
of sauvignon blanc.
"You can understand wine as well as anyone in the world," she told
the group attending her class, Mastering Wine I. "I understand wine
not because I have special taste buds; I don't. They are the same
ordinary taste buds as anyone in this room."
Considering that MacNeil is a widely published wine authority and
director of the wine studies program at the Culinary Institute of
America-Greystone, that was a generous suggestion.
