Tomato Sauce with Salt Pork
1 tablespoon extra-virgin olive oil6 ounces salt pork1
1/2 cups diced red onion1 cup diced red bell pepper
Dash salt Pinch crushed red pepper3 cloves garlic, minced
1 14 1/2-ounce can diced tomatoes, with juice1 8-ounce can
tomato sauce3 ounces tomato paste1 cup water1/4 cup
dry red wine2 tablespoons fresh basil, finely chopped (or 1
teaspoon dried)
