There's been strife in the Main Ingredient household over the past week. The usual experimenting and tasting of the week's recipe took on a rather one-sided dimension when I (Rob) decided to press on with my decision to feature cottage cheese as today's ingredient.

Here's a recap:

Me: "I think I'll do cottage cheese as an ingredient this week."

Tara: "Sick."

And it goes on from there. There are few foods the girl won't eat, but Little Miss Muffet she's not.

So, I was on my own. I made a veggie lasagna using some of last year's roasted tomatoes that I found in the freezer. Layered with roasted eggplant, the tomatoes, spinach, provolone, lasagna ...
