THERE'S a lot of emotional tosh spoken, and written, about veal.
People who consider themselves neither foodies nor extremists
will happily go to the barricades protesting about cruelty. What is
often overlooked is that veal is a by-product of the milk industry.
A dairy cow produces milk to feed a calf; if the cows don't give
birth there can be no milk. The cowcalves can be grown on as
replacement milkers but prospects for bull-calves are not so good.
In these days of artificial insemination, one bull can cope with
several thousand cattle.
To put it bluntly, half the calves born are dairy boys surplus to
requirement. Many farms simply kill the newborn bull calves but some
