Makes 21/2quarts
For the meatballs:
pound ground pork
pound ground veal
pound ground beef
1 large egg
1/2cup freshly grated Pecorino Romano cheese, plus additional for
garnish
2 tablespoons chopped fresh Italian parsley
2 garlic cloves, minced
1/2teaspoon kosher salt
1/4teaspoon crushed red pepper flakes
For the soup:
8 cups chicken stock or broth
1 bunch escarole, trimmed and chopped
1/4cup freshly grated Pecorino Romano cheese
Kosher salt and freshly ground black pepper
- Preheat the oven to 375 degrees. Lightly grease a baking sheet.
