At the Fish Guy Market on North Elston, owner Bill Dugan sells
only one type of caviar -- made from American sturgeon caught in the
Mississippi River, of all places.
The roe sells for $14 an ounce, a steal compared with the $90
average price per ounce of beluga caviar. And, if you ask Dugan, it
tastes better.
"What I think is a real joke is we've always had great caviar here
in this country, and, because of this absurd snob appeal, it's been
overlooked," he said.
The government's announcement last week that beluga sturgeon is
now labeled a "threatened" species under the U.S. Endangered Species
Act might not turn out to be such a bad thing, after all, for caviar
