Article: THIN MINTS FOREVER Two stand-in recipes if your Girl Scout favorites vanish

On a recent Saturday morning trek to my local bookstore, I netted more than a copy of the gardening book that I had ordered. I somehow ended up with two boxes of Girl Scout Thin Mint cookies under my arm as well. I just couldn't resist those hard-working, soft-selling, eager young women standing behind a card table on the sidewalk just outside the store.

As I opened the cellophane tube to munch on a few of these mint- chocolate-coated, chocolate wafer cookies, I remembered the Swap Shop request for a homemade version of this very cookie. I thought this would be an opportune time to look through the responses sent to me and test one or two of them.
