As it went about its remake, Brown's Chicken & Pasta partnered
with entrepreneurship students at Columbia College Chicago.
Students in the school's Arts Entrepreneurship & Small Business
Management program were deployed as mystery shoppers to patronize the
restaurants. They rated the revamped stores on a variety of factors,
including appearance, customer service and quality of food, said
Columbia College Professor Joseph S. Roberts. The stores weren't
given advance notice on when the students would appear.
