Twice-baked cheese souffles are a dinner party cliche, sniffed
the posh hostess. But they are foolproof and delicious and that's
what a host cook needs ... Cheese souffle recipes nearly always
stipulate cheddar and/or parmesan, but this week my refrigerator had
only a firm cow-milk feta and a soft rocket- flavoured sheep-milk
feta to choose from. Flavoured cheese is not something I normally
buy, but waste not want not always appeals. I tweaked the classic
recipe and the result was better than good. Almost fantastic.
Twice-baked cheese souffle
300ml milk
1 bayleaf
40g unsalted butter
40g flour
125g firm cow-milk feta plus 2tsp extra for finishing, grated
50g soft sheep-milk ...
