Food-processing companies continued to restore storm-damaged
facilities in 2007 and roll back reliance on expensive outside
packagers.
As a result, Baumer Foods, Al Copeland Investments, and Georges
Enterprises reported revenue growth in 2007.
For Baumer Foods, producer of the iconic Crystal Hot Sauce and
other condiments, revenue climbed to $33 million in 2007, up 19
percent from $27.8 million the year before.
It was a significant turnaround from the 21 percent revenue
decline in 2006 after Hurricane Katrina destroyed Baumer's Tulane
Avenue manufacturing facility, leaving the company to rely on four
