Article: Spread the green Corned beef deserves a celebration more than yearly

Inever understand why it takes me a fun and celebratory event like St. Patrick's Day to cook corned beef. I do understand why I don't don that neon green shirt any other day of the year, but I cannot forgive myself for forgetting about the joy of corned beef. For whenever I cook corned beef -- and my favorite method is in the slow cooker -- it is gobbled up by young and old.

What's left can be sliced or diced and the basis of tomorrow night's dinner. It seems the constant low temperature of a slow cooker is perfect for simmering corned beef, making it delectably tender.
