Article: Food scientist pioneered mixes for cake, mac and cheese

Credit Peter P. Noznick the next time you make a cake or macaroni and cheese from a box.

Mr. Noznick started tinkering with powdered shortening as a graduate student at the University of Minnesota in the 1940s.

He made it his Ph.D. dissertation and kept working on it as a new employee at food giant Beatrice Foods in 1946.

The company marketed the ingredient as beatreme, and it led to the development of dry cake mixes.

In his 35-year career at Beatrice, Mr. Noznick pioneered the development of powdered flavor technology, which is used in many other foods including cheese-coated snacks and non-dairy creamer.
