Article: Cheese lovers: lower-salt Stilton 'would be a crime': British government wants to encourage healthier diet

A proposal by the British government to lower the salt content of Stilton -- the distinctive blue-veined English cheese that has been made from the same recipe for centuries -- plain stinks, cheesemakers say.

As part of a long-range effort to improve the national diet in England, the Food Standards Agency and the Health Department are proposing reducing salt levels in various foods, from crumpets to meat pies.

The agencies want to lower the salt content of Stilton cheese to 750 milligrams of sodium per 100 grams. The typical sodium content of Stilton, which is made from cows' milk, is about 930 milligrams per 100 grams, according to the Stilton Cheesemakers' Association.
