How do you like your feta? A bit on the tart side or more mildly
flavored?
Is creamy preferable, or do those firm, slightly salty little
chunks make your taste buds wake up and say hello?
Even though the Greeks first produced this robust cheese -- and
they're still using it extensively today -- it has traveled to other
countries over the years and today it's being used in the U.S. in
many different ways. Like Parmesan and fresh mozzarella before it,
feta has become a trendy cheese that is being added to a wide
variety of dishes.
