With reference to Chris Rundle's article, "What's wrong with foie
gras?" (Farm Talk, May 7), I will attempt to explain.
To produce foie gras (fatty liver), male ducks are force- fed
from the age of eight weeks. Every day, up to 4lbs of grain is
forced down the birds' throats, by means of a metal feeding tube -
male ducks are chosen because they produce larger livers, female
hatchlings are crushed to death or gassed.
