Put the cucumber, watercress and garlic into a food processor and
process until smooth, add the mint, chicken stock, yoghurt and
ground coriander, season well with freshly ground black pepper and
process until well mixed. Transfer to a bowl and chill well before
serving.
Place the avocado in a food processor with the lime juice,
chicken stock and chives and process until smooth. Add the cream and
give a short whiz to mix. Transfer to a bowl and chill well.
Meanwhile put the onion, pimento, garlic and chilli into a blender
or food processor and roughly chop, then add the tomatoes and
process with a quick whiz to mix. Serve the soup in chilled bowls
garnished with a spoonful of salsa.
