Article: Take advantage of summer's lettuce bounty

The fresher and more angelic the lettuce, the simpler a green salad can (and should) be. Here's a technique for dressing those perfect lettuces ever-so-lightly, so the flavors will coat the leaves just enough to provide a frame that lifts them up, rather than becoming a "sauce" that, literally, bogs them down.

This is a wonderful opportunity to taste the various heirloom lettuce varieties that are available only during these precious summer months. So buy a selection of pretty lettuces at your farmers market, going for contrasting colors as well as textures.
