HELENE Darroze, chef of the eponymous restaurant in Paris which
currently boasts two Michelin stars, has just taken up what is
reported to be a 10-year contract as chef of the newly revamped
Connaught Hotel. She has already craftily made the point in
interviews that she is a cook who likes to be in her kitchen rather
than running round the world opening franchises or starring in TV
shows.
Were I, say, Gordon Ramsay or, indeed, Helene's erstwhile boss,
Alain Ducasse, I might reply that working in two cities means that
you won't always be in the kitchen, but that is, in any case, a
naive perception.
Darroze has brought Raphael Francois, her head chef from Paris,
to work in London and she is ...
