The ideal wine paired with the perfect cheese can boost both to
new culinary heights - so why is it so hard to find the balance?
It seems simple enough, especially since wine and cheese share so
many comparable qualities. Both undergo fermentation to produce a
product that is completely different and much more complex than
their original core ingredients. Both are aged to perfection, have a
prime, but can easily go downhill.
As with wines, cheeses have their own style, variety,
characteristic and even terroir. They are unique and wide-ranging,
each country having an appellation of origin for its own cheeses.
