IT is a sign of the times when Scotland's food and drink industry
outperforms that of manufacturing. For a nation that was once the
workshop of the world, famous for its thousands of shipbuilders,
steel workers and coal miners, these days it's more likely to be
whisky production, salmon farming or soft fruits that are the
driving force of the economy.
Yet, to many, Scotland has never shed its image as the land of
tartan and kilts, home to syrupy fizzy drinks and the now iconic
deep-fried Mars bar. Paul McLaughlin, the chief executive of
Scotland Food and Drink, wants that to change.
