Homemade Mozzarella with Mushrooms
Serves 6
6 ounces mozzarella cheese curd (ask your specialty grocer)
2 tablespoons extra virgin olive oil
1 cup mushrooms
1 teaspoon minced garlic
1/4 cup diced tomato
1 teaspoon chopped parsley
1/2 teaspoon fresh rosemary
Salt, to taste
Pepper, to taste
1 tablespoon balsamic vinegar
Baguette or crusty bread
1. Fill a medium saucepan filled halfway with water and place on
the stove. Bring the water to a slow simmer. Salt the water until
"it tastes like the sea." Add the cheese curd to the simmering
water. Gently massage the curd with two forks in order to form a
racquetball-sized ball.
