Trim and shred the spring onions. Finely chop the chillis. Peel
and finely chop the ginger. Chop the lemon grass. Peel and finely
chop the garlic.
In a bowl combine the crab, breadcrumbs, coriander and Thai paste
and mix well. Lightly beat the egg and add sufficient to bind the
ingredients in the bowl. Divide the mixture into eight and mould
into flat round cakes about 2cm thick, place on a plate and allow to
chill for half an hour before cooking.
Y OU have to really like crab to make the effort needed to
extricate the meat from all the various sections of its complicated
armour.
