GRILLED PIZZA MARGARITA, $20, Al Forno
Al Forno owners Johanne Killeen and George Germon are widely
credited with the invention of grilled pizza (or at the least,
pioneering it in this country). Cooked over hardwood charcoal on a
grill fired up to about 1,000 degrees, hand- stretched dough is
draped directly on the grates, taken off the heat after about a
minute, and then flipped. Topped with olive oil, fontina, pecorino
Romano, and globs of tomato sauce, it's served uncut and garnished
with shaved scallions. The result: A slightly smoky, salty-sweet,
chewy yet crispy, wonderfully misshapen pie. Get there early to
