If one could taste the tri-state, what would it taste like? The
region is known for its dairy industry, and some believe it should
have a decidedly "cheesy" flavor.
A number of cheese makers and dairy farmers have created a niche
market for specialty cheeses made in the tri-states. The way the
milk cows are fed and the way the cheese is made produce unique
cheeses that can capture the imagination of consumers, they say.
"Everybody's kind of tired of going to eat the same thing all the
time," said Jim Kammes, owner of Harmony Hills Dairy. Harmony Hills
organic cheeses are made from milk produced on Kammes' Kieler, Wis.,
farm. The cheeses are marketed through Shullsburg (Wis.) Cheese.
