IF YOU have a large bag of broad beans to prepare, invite a
talkative friend to entertain you as you de-pod and shell the beans.
Hopefully their story will be long and full of incident - bean
preparation is not high on the excitement list, but it is a tidy and
easy operation.
While the conversation is in full flight, blanch the shelled
beans rapidly in lots of boiling water for three minutes. Drain
quickly under cold water so the beans can be handled, then slip each
bean out of its tough skin. The green kernels can be rewarmed in a
little melted butter or boiling water for a minute only.
With very young, home-grown broad beans it is not necessary to
