Article: Walnuts: the good oil; Get cracking

Fresh Canterbury walnuts and oil are becoming available in commercial quantities. KEITH RAMSAY and MAVIS AIREY report.

Golden walnut oil is beginning to flow from Canterbury. The oil is being produced by West Melton growers Malcolm and Jenny Lawrence, who say it is rated highly by many Christchurch chefs.

The oil is made from nuts grown by a collective of Canterbury growers and processed by the Lawrences' business, A Cracker of a Nut. The oil is processed into walnut paste before being cold pressed in Marlborough.

The big advantage of the Canterbury product is its freshness, Jenny Lawrence says. Imported oil may be years old. Walnut oil goes rancid when exposed to light, and air oxidises it. ...
