Fresh, young, green broad beans are one of the delights of spring
-- but you have to be quick: all too soon the pods are fat, the
beans
have tough white skins, and they get an unappealing, mealy texture.
In some countries, such as Greece, mature broad beans are dried
for year-round use, but broad beans freeze so well I think the
preferable treatment is to pick them when they are young and freeze
them for a welcome taste of spring in the cold months.
Broad beans may be hard to find in shops because they do not keep
well, so if you do not grow your own it is worth going to a market
garden where you can pick your own. Up to 7cm long, they can be
eaten raw -- pod and all -- or cooked in the pod. ...
