Pickled pork was part of Christmas in our house, when I was a child. On Christmas morning one or two boiling chooks and a large piece of pickled pork were put into a large boiler on the stove. All sorts of flavourings were added, and the pot simmered away for hours, filling the house with the smells that we children always associated with Christmas dinner.

Many chairs were always around the table when the meal was served. My father had the two ashets put in front of him, and asked each person what combination of breast or leg of chicken, stuffing, and pickled pork he or she wanted. I am ashamed to say that we all
