I think I love Roquefort now more than ever. It's not just any
blue cheese; it's blue cheese for the soul. Internationally famous
and one of the world's oldest known cheeses, Roquefort, [rohk-FOR],
might not exist had it not been for wondering eyes. Its claim as the
oldest name protected cheese in France assures me I'm not alone in
my passion.
Long, long ago in the valley of Soulzan, a young shepherd boy was
keeping his sheep and wandered into a nearby cave to nosh on his
rustic lunch of rye bread and cheese curds. Noticing a beautiful
