Leticia Romero peered into a bowl of congealing curds and whey
and didn't like what she saw. "Ew," said the 15-year-old
Eisenhower High School freshman, who was taking a cheesemaking class
with her mother and about a dozen other people. "It looks like it's
spoiled." "Oh, no," said instructor Anna Zaragoza. "This is a safe
product. You don't have to worry about this." Zaragoza should know.
She and her sister, Frances Herrera, have taught hundreds of people
how to safely make the traditional Mexican cheese called queso
