For more than 10 years there have been no changes in the
recommendations for canning tomatoes.

Q. What kind of tomato is safe to can?
A. Any kind of tomato is safe to can, including cherry, pear,
paste, tomatillos, green tomatoes, etc. The variety doesn't matter
- even if it's promoted as being a low-acid tomato. Low-acid
tomatoes simply have more sugar in them so they taste less acid, it
doesn't affect their pH or safety.
Just don't can overripe tomatoes or tomatoes from dead or frost-
killed vines. Only use firm, underripe-to-just-ripe ones. Overripe
tomatoes can be frozen.
