Fruit leathers are a wonderful way to use extra-ripe fruit or
even frozen and canned fruit you have left over from last year.
These chewy fruit roll-ups are basically fruit purees spread in
thin layers and dried in the oven, sun or a dehydrator. Once dried
into chewy, leathery sheets they make a delicious snack. They
require very little in the way of equipment and allow for individual
creativity through combining different fruits, so they are an
especially good choice for a food-preservation beginner to try.
