Tomatoes are the No. 1 food canned in Washington state. And, the
recommendations for canning them have been the same since 1988.
To reassure yourself, check these answers to tomato-canning
questions:
Q. What kind of tomato is safe to can?
A. Any kind of tomato is safe to can including cherry, pear,
paste, tomatillos, green tomatoes, etc. The variety doesn't matter -
even if it's promoted as being a low-acid tomato. Low-acid tomatoes
simply have more sugar in them so they taste less acid, it doesn't
affect their pH or safety.
Just don't can overripe tomatoes or tomatoes from dead or frost-
killed vines. Only use firm, underripe to just-ripe ones.
(Overripe tomatoes can be frozen.)
