Motueka's cheesemaking Light family have not yet started eyeing up
the national sheep flock, only a few of the estimated 45 million
would meet their milking needs.
But the three-member family who own and run Parkerfield Dairy are
looking to sheep, and goats, in order to diversify their hand-crafted
cheese business and add yet another taste sensation to their product
list.
Adrian, the son of Kate and Selwyn Light, admitted that entering
the field of making sheep's milk cheese was relatively uncharted
territory but he has been confident enough to organise milk supplies
from Neudorf farmer Brian Beuke and Roger Fraser of Wairau.
