A granita is nothing more than sugar, water, and lemon juice (and fruit puree for some variations).

It is a relatively coarse frozen ice which, instead of being churned in an ice cream machine, is simply placed into the freezer in a shallow pan and then stirred and scraped every 20 minutes or so until it achieves the proper consistency, which can take 2 to 3 hours.

Although simple in concept, it turns out that granitas are relatively complicated and involve a bit of mathematics in order to achieve the perfect balance of sweet and tart and a texture that is icy and on the grainy side of smooth.
