FOR some cooks, pumpkin cheesecake is a culinary holy grail, the
secret recipe they pull out during any season when they want to
impress guests with a spectacular dessert.
The rest of us are a bit skeptical - after all, why muck up such
a divinely simple recipe as cheesecake with pumpkin? The answer
became clear during my testing. Pumpkin cheesecake, when made
properly, is a divine marriage of three ingredients - cream cheese,
sour cream, and pumpkin - that have a natural affinity for each
other. The problem, I found, was to enhance the flavor of the
