BLEU cheese dressing sounds simple enough, but many cooks turn it
into a Frankenstein of a recipe, adding Worcestershire sauce,
chopped parsley, lemon juice, red pepper, minced garlic, garlic
powder, onion, and even cream cheese. Other recipes seem to forget
entirely about the bleu cheese, adding so little that one can hardly
taste it. The question was, how can one make a relatively simple
bleu cheese dressing with a creamy consistency, a tangy, slightly
sweet flavor, and a big cheese taste without being heavy or
overpowering?
I started by testing four recipes, one each from Cook's
Illustrated magazine, The Victory Garden Cookbook, The Fannie Farmer
Cookbook, and ...
