What consumers commonly associate with the word "coconut" is the
inside of the green fibrous fruit. Its covering has been hacked off
with a machete to expose the hairy, brown shell and thin skin that
protects the treasure within: the sweet, snow-white meat and silky,
smooth coconut juice (though milky, it is not to be confused with
actual coconut milk; see below). Coping with a fresh coconut
involves a steep learning curve. That said, nothing compares with
freshly flaked coconut or fresh coconut milk.
- TO SELECT: Coconuts are available in produce aisles year-
round. Lift the coconut; it should feel heavy for its size. Shake
it; listen for liquid jostling inside.
