Article: Fresh coconut is a real treat: ; Pick ones that feel heavy for their size

What consumers commonly associate with the word "coconut" is the inside of the green fibrous fruit. Its covering has been hacked off with a machete to expose the hairy, brown shell and thin skin that protects the treasure within: the sweet, snow-white meat and silky, smooth coconut juice (though milky, it is not to be confused with actual coconut milk; see below). Coping with a fresh coconut involves a steep learning curve. That said, nothing compares with freshly flaked coconut or fresh coconut milk.

- TO SELECT: Coconuts are available in produce aisles year- round. Lift the coconut; it should feel heavy for its size. Shake it; listen for liquid jostling inside.
