SWEET potato casserole is one of those dishes which sounds great
but which usually disappoints because it is too sweet, more like a
sweet potato pie than a savory side dish. Although I am fond of
mashed sweet potatoes, a sweet potato casserole usually uses slices
and since sweet potatoes are softer and stickier than regular
potatoes, this creates problems. This notion was confirmed when I
tried recipes from the Joy of Cooking (sweet potatoes are combined
with apple slices), Fannie Farmer (sweet potatoes combined with pork
chops), James Beard's American Cookery (sweet potato puree), and,
finally, a recipe from my own magazine, Cook's Illustrated (the
texture was slippery and the flavor was ...
