No holiday meal would be complete in France without serving foie
gras. As Easter approaches, the French are scrambling to make their
most prized culinary secret: perfect foie gras. Foie gras literally
means "fat liver" and is obtained by overfeeding ducks or geese for
a certain period of time. The excess food changes the course of
growth of the liver, making it completely different from regular
liver.
There are two kinds of foie gras: duck and goose foie gras.
Traditionally, foie gras is goose liver, but with the increase in
demand for it, producers have turned toward duck liver for many
reasons.
