During the past decade or so, Americans have discovered the
luscious, rich, floral flavors of balsamic vinegars. They've
drizzled them on their salads, sprinkled them on their sautes and
used them to marinate strawberries.
Balsamic vinegars have become so popular that they've even joined
the basic apple cider vinegars and red wine vinegars on grocery
shelves.
But not all balsamic vinegars measure up to the benchmark - those
produced in the Modena, Italy, area, where they were first made and
used. Truth is, picking a quality balsamic vinegar can be as
difficult as picking out a diamond from a pile of cubic zirconium.
